Fried chicken served bruschetta with a garnish of fresh tomatoes!
La bruschetta is an Italian dish consisting of sliced bread brushed in olive oil, toasted before being rubbed with garlic and topped with a side dish, often a mixture of diced tomatoes and basil. In its original form, it is a tasty snack and it is easy to turn it into a light meal by serving the diced tomato-basil mixture on fried (or grilled) chicken! This food is super easy! The chicken is seasoned with a mixture of Italian herbs before being fried and with a mixture of diced tomatoes seasoned with garlic, onions, extra virgin olive oil, balsamic vinegar, salt and pepper with fresh basil. This bruschetta chicken is fabulously served with pasta or rice accompanied by a steamed vegetable for a light, tasty and healthy meal!

Ingredient
1 Pound boneless, skinless chicken breast (or thigh) filled with butter or finely pounded
1 Teaspoon of Italian seasoning
Salt and pepper to taste
1 Tablespoon of olive oil
2 Cups of tomatoes pitted and diced
1 Tablespoon extra virgin olive oil
1 Tablespoon balsamic vinegar
1 Clove of garlic, chopped/grated
2 tablespoons red onion, finely diced
2 Tablespoons of basil, chopped
Salt and pepper to taste
Direction
Season the chicken with Italian seasoning, add salt and pepper to taste.
Heat the olive oil in a saucepan over medium heat, add the chicken and cook on both sides until golden brown, about 3 to 5 minutes on each side, before removing it from the heat.
Mix tomatoes, extra virgin olive oil, balsamic vinegar, garlic, onion, basil, salt and pepper.
Serve the chicken with the tomato mixture.
Note: the chicken should be about 1/2 inch thick to cook quickly. You can cut the chicken into slices or finely pound it.
Tip: prepare the tomato mixture in advance (an hour to a day) so that the flavors mix and stand out more! If you do, add the basil just before serving.
- Option: Garnish with Parmigiano reggiano (parmesan).
- Option: garnish with a dash of balsamic glaze.
- Option: Mix 1 tablespoon of basil pesto in tomatoes!
