A smooth and creamy sweet potato soup with hints of smoked Chipotle chili!
This creamy sweet potato soup with steaming Chipotle peppers warms the body and soul; the perfect comfort food! It starts with onions and peppers for vegetables, Garlic, Chipotle peppers in Adobo Sauce, cumin, peppers and oregano for taste and vegetable broth, tomatoes and sweet potatoes! Everything is cooked until the sweet potatoes are tender before some of them are mashed into the soup, making it thick and creamy. (I like to leave some of the sweet potato pieces for texture in the soup, but you can mash them all up too.) The soup is supplemented with a little lime juice and fresh cilantro. I like to top this Chipotle sweet potato soup with sour cream or Pepitas and crumbled cheese!
Top with crispy fried Chorizo and salsa Macha (chili oil)!

Ingredient
1 tablespoon Of oil
1 onion, diced
1 bell pepper (red, orange, yellow or green), diced
3 cloves of garlic, chopped
2 Chipotle peppers in Adobo sauce, chopped*
2 teaspoons ground cumin
2 teaspoons smoked Paprika
4 cups vegetable (or chicken) broth
2 large sweet potatoes, peeled and diced
1 (15 oz.) can diced tomatoes
1/2 teaspoon Oregano
1 Tablespoon Of Lime Juice
salt and pepper to taste
1/4 cup chopped cilantro (optional)
Direction
Heat the oil in a large saucepan over medium heat, add the onion and bell pepper and cook until tender, about 7-10 minutes.
Add the garlic, Chipotle peppers in the Adobo Sauce, cumin and Paprika and cook for about a Minute until fragrant.
Add broth, sweet potatoes, diced tomatoes and oregano, bring to a boil, reduce heat and simmer for about 15 minutes until sweet potatoes are tender.
Puree some or all of the sweet potatoes in the soup before seasoning with lime juice, salt and pepper.
Stir in the cilantro and enjoy!
NOTE: * You can control the spicy heat with Chipotle peppers. Use less if you want it softer, and use more if you want it warmer!

- Option: Add 1 (14 oz) can of black beans, drain and rinse!
- Option: Add 1/2 Cup Quinoa and an extra cup broth and simmer until Quinoa is tender, about 15 minutes.
- Option: Add 1/2 cup of lentils and an extra cup of broth and simmer until lentils are tender, about 15 minutes.
- Option: add 2 cups chopped spinach and the end. mix it and let it wilt.
