Feta cooked with olives, tomatoes and oregano that melts into Crostini, crackers or Chips in which it is dipped!

Feta is one of my favorite cheeses and I almost always have one in my refrigerator. I like tubs where there is a solid block of Feta in brine and you can easily pull out what you need and use it as a block or crumble it. Feta cooks very well; it melts on the inside but retains its shape on the outside! After baking, you can easily dip crackers into it, spread them on Crostini or even mix everything together. This Mediterranean Feta cooks Feta with delicious Mediterranean flavors/ingredients such as olives, sun-dried tomatoes, oregano and olive oil. I like to serve this “dip” with spoons so you can scoop up some of the melted Feta with each of the ingredients on Crostini or crackers and it’s just awesome! This is a great appetizer or snack for any occasion!

Ingredient

8 oz feta Block
1 cup Pitted olives (kalamata, green, etc.)
1 cup cherry/grape tomatoes, cut in half
1/4 cup sun-dried tomatoes, cut into thin slices
1 clove garlic, chopped/grated
1/2 teaspoon Dried oregano
1/4 teaspoon dried Thyme
salt and pepper to taste
1/4 cup olive oil

Direction

Insert the Feta into a large baking dish.

Mix the olives, tomatoes, sun-dried tomatoes, garlic, oregano, thyme, salt and pepper and pour into the baking dish around the Feta.

Drizzle olive oil over everything.

Bake in a preheated 400F/200C oven for 20 minutes before turning on the grill to fry until the Feta turns a golden light, about 2-3 minutes.

  • Option: Add chopped artichoke hearts.
  • Option: Add the finely sliced roasted red peppers.
  • Option: serve with Crostini for dipping! (Cut a Baguette into thin slices, brush with olive oil, roast in the oven and possibly rub with a clove of garlic after toasting!)
  • Option: Mix with cooked noodles to make a delicious meal!
