Hot fried potatoes in a dijon lemon vinaigrette with goat cheese melting in potatoes!
I am a big fan of soft and creamy goat cheese like goat! When the goat cheese has cooled, it is crumbly, soft and spreadable at room temperature, and when it is heated a little, it melts and becomes soft, creamy and good! This recipe combines crispy roasted potato wedges with melted goat cheese in addition to a dijon vinaigrette with lemon. It’s as easy to make this side dish as roasting the potatoes and adding them to the vinaigrette while keeping them warm! These potatoes are best enjoyed when still hot and crispy from the oven, and they are also excellent when warmed up.

Ingredient
For roasted potatoes:
2 Pounds of potatoes, cleaned and cut into quarters
1 Tablespoon of oil
Salt and pepper to taste
For vinaigrette:
4 Tablespoons goat cheese, crumbled, at room temperature
2 Tablespoons olive oil
2 tablespoons lemon juice (or apple cider vinegar)
1 Clove of garlic, chopped/grated
1 teaspoon of Dijon mustard
1 Teaspoon of granular mustard
Salt and pepper to taste
Direction
For roasted potatoes:
Mix the potatoes in the oil, salt and pepper mixture and put them on a baking sheet in one layer.
Bake 400F/200C until golden brown and crispy on both sides, about 35 minutes in total and turn halfway through.
For vinaigrette:
Mix everything well.
Mix the vinaigrette and the potatoes while they are still hot in the oven, let the cheese melt and enjoy it warm!
